Mother Nature is all around us. She is what makes this planet so beautiful and luscious. Yet, in the winter time, it seems like there is not much around us that gives us those reminders of how green and beautiful this planet really is. Is it the visual queues that are lacking that makes it that much easier to not get as many greens into our diet too? Well, whatever it may be, we find that in the winter time greens are a bit more difficult to eat every day. Instead of trying to find every green vegetable possible to inhale, it can easy to stick to a couple that you know and love. Of course, sticking to vegetables that are more season are full of wonderful nutrients for your body as well.
BRUSSELS SPROUTS
Brussels Sprouts are not one of the most loved vegetables. In fact, most people love them or hate them. Personally, we are huge fans of baked brusselsย sprouts. Brussels Sprouts are packed with Vitamin C (great for the immune system), fiber (helps keep you regular), folate, antioxidants, etc. Cut them, coat them with coconut oil or ghee and bake them atย 350 until crispy (about 20 minutes). Just don’t forget to crack a window open, they can get a bit potent.
SPINACH
Spinach packs in a lot of nutrients for how small it really is. Have you ever tried sauteeing spinach? Yeah, you know what we mean by saying how small it can be! Spinach contains potassium, manganese, zinc, magnesium, iron, calcium,ย folate, niacin, vitamin A, vitamin B6, vitamin C, and beta-carotene to name a few. We like to throw spinach into our eggs in the morning or our post workout protein shakes.
