You have avocados sitting on your counter that you have been waiting patiently for them to ripen. All of a sudden, today is the day they are ready and you feel a bit unprepared. You don’t want to let another day go by because you know they will be rotten by morning. Here are three different ways to incorporate your ripe avocados into any meal for the day.
Baked Breakfast Avocado
Serves 4
ingredients
- 2 ripe avocados
- 4 large eggs
- pinch of salt
- pinch of pepper
- ยผ cup bacon bits
- 4 cherry tomatoes, quartered
- 1 sprig fresh basil, chopped
- shredded cheddar cheese
instructions
- Preheat oven to 400 degrees F.
- Slice each of the avocados in half and remove the pits.
- Grab a baking sheet and place the avocado halves on a baking sheet, open side up.
- Scoop out some of the flesh to make a bigger hole to add your other ingredients.
- Crack one egg into each avocado hole and season with salt and pepper, to taste.
- Top the eggs with your additional toppings (minus the basil) and bake for 15 minutes or until the yolk reaches your desired consistency.
- Sprinkle with basil.

Baked Avocado Fries
ingredients
- 2ย ripe avocados
- ยฝย cupย all-purpose flour or gluten-free flour
- 2ย large eggs
- ยพย cupย bread crumbs
- 1ย tspย sea salt
- ยผย tspย garlic powder
instructions
- Preheat oven to 425 degrees F.
- Grease a large baking sheet generously with avocado oil.
- Slice avocados in half, pit them and then slice them lengthwise into thin wedges.
- Add the flour and sliced avocados to a Ziploc bag and shake gently to coat.
- Crack eggs into a bowl larger than the avocado slices and beat the eggs.
- In another small bowl, combine bread crumbs, salt, and garlic powder.
- Remove the flour-coated avocados from the Ziploc and dip them into the eggs, then put them into the bread crumb mixture making sure you entirely coat the avocado.
- Then place coated avocado pieces in a single layer on the prepared baking sheet and spray them with cooking spray.
- Bake for 8-10 minutes, flip over and bake an additional 5 minutes or until golden brown on both sides.
Keto Chicken Stuffed Baked Avocados
ingredients
- 4 avocados, halved and pitted
- 2 cooked chicken breasts, shredded
- 4 ounces cream cheese, softened
- ยผ cup tomatoes, chopped
- ยผ teaspoon salt
- ยผ teaspoon ground black pepper
- 1 pinch cayenne pepper, optional
- ยฝ cup shredded Parmesan cheese, or more to taste
instructions
- Preheat oven to 400 degrees F.
- Grease baking pan with avocado oil.
- Scoop out some of the flesh in the center of each avocado; place it into a mixing bowl.
- Add chicken, cream cheese, tomatoes, salt, pepper, and cayenne pepper and mix well.
- Scoop spoonfuls of the chicken mixture into the holes of each avocado.
- Top each with a generous amount of Parmesan cheese.
- Place avocados face-up on a baking sheet.
- Bake avocados for about 8-10 minutes or until cheese is melted.
