There isn’t another holiday out there that literally isn’t all about the food except for Thanksgiving. There are no costumes to dress up in, well maybe some matching pajamas sets, but literally Thanksgiving’s biggest highlight is the spread that we find on our platesโand then again for round two.
For Thanksgiving, we are taught to be extra thankful this time of year. However, typically during this meal, we are not being very kind to our bodies that we have so many thanks to give to it the rest of the year. This year why not celebrate Thanksgiving by cooking foods that won’t leave you feeling bloated, needing to unbutton your pants and leave you in a coma on the couch afterward. And if that is totally your thing we are not judging.

‘Sweet Potato’ Casserole
ingredients
Veggies
- 4 cups butternut squash, peeled and cubed
- 1 medium head cauliflower, chopped into florets
- 2 TBS ghee
- 1 tsp cinnamon
- 3/4 tsp garlic salt
- 1/2 tsp black pepper
- 2 packets monk fruit
Topping
- 2 cups pecans, divided into 1.5 cups and 0.5 cups
- 8 packets monk fruit
- 1 tsp cinnamon
- 1/8 tsp garlic salt
- 2 TBS ghee
instructions
- Start by preheating the oven to 400 degrees F.
- Line two baking sheets with parchment paper.
- In a large bowl, toss together the cubed butternut squash, cauliflower florets, a tablespoon of melted butter (this is half the amount called for in the veggie ingredients section), garlic salt, cinnamon, and black pepper.
- Arrange the veggies in a single layer on the baking sheets.
- Place in the oven and roast for about 30-35 minutes. After 15 minutes is up rotate and the pan and feel free to toss the veggies too.
- Remove veggies from the oven when they are very soft and golden.
- While the veggies are roasting pulse the 1/2 cup of pecans in a food processor until a powder forms.
- Give the remaining 1 1/2 cups pecans a good chop with a knife to create larger pieces.
- Then place both the powder and chopped pecans in a small bowl.
- To the small bowl, add the monk fruit, cinnamon, and garlic salt.
- Melt the butter and stir it in until the mixture is crumbly.
- When the vegetables are done roasting, remove them from the oven, but don’t turn the over off quite yet.
- With a blender or immersion blender, puree the veggies until smooth.
- Add in the sweetener and remaining tablespoon of melted butter into the puree and give it a stir with a spoon.
- Transfer the puree into a 2-quart baking dish and smooth the top with a spoon or spatula.
- Lastly, sprinkle the pecan crumble topping over the casserole and place back in the oven for about 20 minutes or until the top is a nice golden brown.
- Serve immediately.
Crustless Pumpkin Pie
ingredients:
- 1 can (16oz) organic pumpkin puree
- 2 large cage-free eggs
- 1/2 cup monk fruit
- 1 TBS pumpkin pie spice
- 1 tsp cinnamon
- 1/4 tsp sea salt
- 1 cup full-fat coconut milk, unsweetened
Method:
- Preheat oven to 350 degrees F.ย
- In a large bowl, mix together all ingredients until fully combined.
- Lightly grease a pie pan and pour the mixture into the pie pan.
- Bake in the oven for 60 minutes or until a toothpick comes out clean.ย
Thanksgiving Gravy
ingredients
- 4 TBS unsalted butter
- 1 cup turkey pan drippings
- 2 cups low-sodium beef broth
- 2 tsp Worcestershire sauce
- 1 tsp garlic powder
- pinch kosher salt
- pinch freshly ground black pepper
- 1/2 tsp xanthan gum
instructions
- In a medium skillet over medium heat, melt the butter. Slowly add the pan drippings and broth, whisking until smooth.
- Bring to a boil, then add Worcestershire and garlic powder and season with salt and pepper.
- Reduce heat and let simmer 10 minutes.
- In a small bowl, add xanthan gum and a couple TBS of the broth mixture. Mix together with a fork or whisk to make sure there are no clumps.
- Add xanthan gum mixture to the broth on the stove and simmer for another 5 to 10 minutes until the mixture starts to thicken.
- You do not want a paste. Additionally, the gravy with thicken as it cools too.
- If gravy is too thick, thin with more broth as necessary.
- Serve warm.
