Nothing really beats starting your morning with a favorite meal. Those first bites align your tastebuds and energy in complete harmony revving your engine for a delicious (and nutritious, hopefully) start to the day! Or maybe you don’t care much for breakfast and all we are going to say is that you should–maybe this recipe will change your mind.
An issue most people have with mornings is that there isn’t time but that isn’t an excuse we find acceptable here at EBOOST. If it is important enough to you then you will make the time. In this case, you don’t even have to lose sleep over it. This recipe is easy and can be made in a big batch to leave you just needing to warm it up or enjoy it cold each morning.
What you do need for this recipe is an Instant Pot. If you don’t have one already, they certainly are becoming more of a staple in kitchens these days as they are so versatile and easy to use. There are thousands of meals you can make in it, where you literally just dump all of your ingredients into the pot, set the timer and walk away. The only real catch though is that things aren’t made in an instant like you may assume from the name. Instead, it takes meals that would normally slow cook for hours and turn them into meals that happen in a much shorter amount of time, so this is where the instant in the name comes from. Sorry got a little sidetracked there.
Here is a classic Oatmeal recipe to throw together in an Instant Pot as well as one a bit unconventional but super yummy and packed with even more health benefits –
Classic Oatmeal
4-5 servings
ingredients
For Steel Cut Oats
2 cups water
1 cup unsweetened vanilla almond milk
1 cup steel cut oats
1 cinnamon stick
1 generous pinch of kosher salt
For Old Fashioned Rolled Oats
1 cup water
1 cup unsweetened vanilla almond milk
1 cup old fashioned rolled oats
1 cinnamon stick
1 generous pinch of kosher salt
instructions
- Add the oatmeal of your choice and the liquid ratios that match to the pot of your Instant Pot along with the cinnamon stick and kosher salt.
- Press the manual setting and set the cooking time for 3 minutes on high.
- Once the cooking time ends, allow the oatmeal to sit in the pot to natural release the pressurized steam for 20 minutes.
- Open the release valve to release any remaining steam in the pot and always face the lid away from you when opening.
- Add toppings of your choice.
Savory Porridge
Serves 4
ingredients
5 cups water
½ cup brown rice
½ cup whole-grain multigrain blend
1-inch knob ginger, peeled and cut into ¼-inch-thick slices
1 green onion, white and tender green parts, thinly sliced
Coconut aminos and toasted sesame oil and/or Sriracha for serving
instructions
- Add the rice, multigrain blend, water, ginger and onion to the pot of your Instant Pot along with a pinch of kosher salt.
- Press the manual setting and set the cooking time for 30 minutes on high.
- Once the cooking time ends, allow the oatmeal to sit in the pot to natural release the pressurized steam for 25 minutes.
- Open the release valve to release any remaining steam in the pot and always face the lid away from you when opening.
- Open the pot and stir your mixture as it may seem a bit thin at first but it will thicken as it sits.
- Remove the ginger slices and let the porridge sit for about 5-10 minutes.
- When you are ready to serve add the toppings.
