When it comes to all of these national food holidays it is a bit hard to keep up. I swear every single day is national food something day. Seeing ‘National Cookie Dough Day’ pop up, I had to whip up a recipe in celebration of that. I mean, who doesn’t like cookie dough? I honestly, don’t think I have ever met someone that didn’t like cookie dough. I think if you don’t like cookie dough, then you don’t think the sky is blue and well, you get the idea.
To celebrate ‘National Cookie Dough Day’ I experimented with a (I am sure you can guess by now) healthy version of cookie dough and guys this literally tastes like the real deal but WAY healthier. When I say healthy, I don’t mean you should eat it as often as you should be eating veggies, but when your sweet tooth hits next time, reach for some of this EBOOST Chocolate Chip Cookie Dough. It keeps in the frig for a couple weeks and in the freezer for WAY longer. All you need is your will power to keep you away.
EBOOST Chocolate Chip Cookie Dough
Vegan. Gluten-free. Paleo. Low Sugar. Dairy free.
ingredients
1/4 cup coconut oil, melted
1 TBS canned coconut cream or chia seed pudding
2 TBS unsweetened coconut milk
2 tsp pure vanilla extract
2 TBS honey
1.5 cups almond flour
1/2 cup vegan chocolate chips
instructions
mix together all ingredients except the chocolate chips
fold in chocolate chips
chill for 30 minutes
roll into balls, scoop into ice cream cones, eat with a spoon out of a bowl, and whatever really whatever you like
store in an airtight container
