Sundays are the absolute best. You get to sleep in, lounge around, get around to doing things when you want to do them, as well as have the most killer brunch. Instead of going out to brunch, invite your friends over and show them how to brunch the EBOOST way! Go ahead make your neighbors jealous!
EBOOST BERRY BRUNCH ‘CAKE’
gluten free and dairy free
ingredients
1/4 cup coconut oil
4 eggs
1 tsp baking powder
1 tsp salt
3 cups almond flour
1/2 cup unsweetened coconut flakes
1/4 cup local honey
1 pint berries (I used raspberries and blackberries)
1 EBOOST super powder (Acai Pomegranate)
instructions
preheat oven 350 degrees Fahrenheit
spray coconut oil on bread pan, pie pan or tart dish… however, you would like it served
combine all ingredients together (minus the coconut,ย berries, and super powder)
if the batter seems thick, slowly add nondairyย milk
fold in coconut and berries
bake for 30 minutes or until golden brown on top
meanwhile, make drizzle by adding the super powder with 2 TBS water
cool and serve with an EBOOST super powder drizzle
***you can always opt out of the drizzle and serve the cake with an 8oz water and a super powder or get fancy and serve our orangeย EBOOST superย powder with 4 ounces of water and 4 ounces of champagne for an EBOOST mimosa.***
