With Mother’s Day tomorrow, I thought it would be fun to share a recipe with you all that you can easily do at home to celebrate with. Because what Mother doesn’t like something homemade from their kid?
This recipe is pretty easy and can be fun to do with children too!
Before I get on with the recipe, this recipe is truly dedicated to all the mother’s out there who know a way to a kid’s heart is through popsicles so now it is time to return the love!
Eboost Chia Raspberry Popsicles
what you’ll needย
popsicle molds
2 medium bowls
immersion blender or blender
1 can full-fat coconut milk
3 TBS organic chia seeds
1/3 cup raspberries
2 tsp stevia (optional)
1 Eboost energy shot
(I used Superberry but any flavor should work just fine)
instructions
In one of your medium bowls, empty can of coconut milk into a bowl and make sure it is all mixed together well.
Then add chia seeds. Mix seeds. Let sit for 30 minutes, occasionallyย stirring a few times.
In your second medium bowl, add energy shot, raspberries, and stevia. Use an immersion blender to puree.
Grab popsicles molds and start adding the two mixtures from your medium bowls.
Keep in mind that the coconut chia mixture is heavier than the raspberry mixture.
I played around a bit with layering, but I suggest putting the coconut chia in first. I lightly tapped the bottle of the mold on the counter to get it to sink all the way to the bottom.
Freeze for 4 hours.
